Triple Layer Cookie Bars

 

Peanut Blossoms

  • 1 3/4 cup flour
  • 1/2 C. sugar
  • 1/2 C. firmly pack brown sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 C. solid shortening
  • 1/2 C. peanut butter
  • 2 T. milk
  • 1 tsp. vanilla
  • 1 egg

Combine dry ingredient and set aside.Cream sugars, shortening, peanut butter, milk and egg. Add dry ingredients to creamed mixture. Shape into balls and roll in additional sugar. Place on ungreased cookie sheet in 375 degree oven for 10 minutes. Remove from oven and top each with a candy kiss. Place back in oven for one minute. Allow to cool slightly and remove from cookie sheet to cooling rack. (Chocolate will harden as cookie cools.)


Walnut Rollups (from the kitchen of Claudia Barney)

  • 1/2 lb. butter
  • 1 pkg. yeast
  • 1 egg
  • 3/4 C. sour cream (1/2 pint)
  • 3 C. flour

Place yeast and sour cream together in bowl for 15 minutes. Add remaining ingredients and mix well. Shape into a ball and refrigerate overnight. Divide into 3 equal parts. Roll into rectangles on board covered with confectioners sugar. Sprinke brown sugar and chopped walnuts over dough and roll starting at the short side. Place the rolls on a greased and floured baking sheet. Bake at 350 degrees for 35 minutes or until golden brown.

 

Cookie Squares

  • 2 T. butter melted in 8x8" baking pan
  • 8 butter cookies crushed (approximately one cup)
  • 6 oz. chocolate bits
  • 1 C. chopped walnuts
  • 3/4 C. sweetened condensed milk

Layer all ingredients in baking pan on top of melted butter. Pour sweetened condensed milk over top and bake for 25 minutes at 350 degrees. Cut into squares while slightly warm.

 

Mint Surprise Cookies

  • 3 C. flour
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/2 C. butter softened
  • 1 C. sugar
  • 1/2 C. brown sugar
  • 2 unbeaten eggs
  • 2 T. water
  • 1 tsp. vanilla

Mix flour, sugar and salt; set aside. Cream butter, sugar, and brown sugar. Blend in eggs, water and vanilla. Add dry ingredients and mix well. Cover and refrigerate at least 2 hours. Enclose a chocolate mint wafer in about 1 T. of chilled dough. Place on a greased cookie sheet. Top each with a walnut half. Bake at 375 degrees for 10 to 12 minutes or until golden brown.

 

Chocolate Chip

Everyone's favorite with a twist -Don't stop after adding the chocolate chips, add some white chocolate chips as well. Walnuts are great, but macadamian or pecans add a special touch. These can also be baked in a 13 1/2 x 9" pan and cut into squares.

Triple Layer Cookie Bars

  • 1/2 C. butter
  • 1 - 1/2 C. graham cracker crumbs
  • 7 oz. flaked coconut (2-2/3 cups)
  • 14 oz. sweetened condensed milk (not evaporated)
  • 12 oz. chocolate chips
  • 1/2 C. peanut butter

Melt butter in 350 degree oven in 13x9" baking pan. Sprinkle graham cracker crumbs over butter and top evenly with sweetened condensed milk. Bake 25 minutes or until lightly browned. Remove from oven and set aside. Over low heat, melt chocolate chips with peanut butter and spread evenly over hot coconut layer. Cool 30 minutes and place in refrigerator to chill thoroughly before cutting into bars.
