Irish Coffee

  • 8 tsp. sugar
  • 6 cups strong hot coffee
  • 8 jiggers Irish whiskey
  • 1/2 c. heavy cream, whipped

Place 1 tsp. of sugar into each goblet or mug and add enough coffee to dissolve the sugar. Stir. Add a jigger of Irish whiskey to each. Fill almost to the top with more coffee. Add whipped cream and serve at once.

 

Cafe Brulot

  • 5 sugar cubes
  • 1 c. brandy
  • 4 cups very strong coffee (espresso works well)
  • 1-3" stick of cinnamon
  • 6 whole cloves
  • 1 piece vanilla bean
  • 1-3" strip of orange rind

Soak a sugar cube in brandy, remove and set aside. Add remaing 4 sugar cubes to brandy. Pour coffee into chafing dish or metal bowl with a flame underneath it. Add cinnamon stick, cloves, vanilla bean and orange rind. Stir and add brandy with the 4 remaining sugar cubes. Place brandy soaked sugar cube on metal serving spoon and ignite. Add, flaming to the coffe mixture and serve immediately.
